    Ingredients

    1.5kg New Potatoes
    400g Duck Fat
    Salt and Sage

    Method:

    1.       Pre-heat the oven to 200ͦC. Heat the duck fat in a roasting pan         

    2.       Peel the potatoes and boil to par cook for 5 to 10 mins. Drain well.

    3.       Add to the heated fat and cook for 30-45mins until golden, crisp and tender.

    4.     Remove from fat and season with Maldon salt flakes and sprinkle with fresh sage leaves. The sage leaves can be deep fried in duck fat if preferred.
