ROAST DUCK WITH A CHERRY SAUCE

Ingredients

1 duck (2-2.2kg)

1 Orange zested and juiced

1tsp Ground ginger

1tbs Soy sauce

1tbs Lemon juice

60ml Port

410g Canned, pitted cherries

1tbs Cornflour

Salt and pepper to season

 

Method

ROAST DUCK WITH ORANGES AND CLOVES

Ingredients

1 duck

100g butter, softened

1tbsp brown sugar

4 oranges, two zested finely

2tsp ground cloves

1 bunch thyme, broken into sprigs

4 onions, cut into wedges

1/2 cup (125 millilitres) sweet vermouth or brandy

 

Method

  1.  Preheat oven to 220°C.

  2. In a bowl, combine butter, sugar, finely grated rind of 2 oranges and cloves. Season to taste.
